Baked Potato Salad

2 1/2 lbs red potatoes, cubed
4 slices bacon
1 cup cheddar cheese, shredded
1/2 onion, chopped
1 cup mayo
1/8 cup white sugar
salt and pepper to taste

Preheat oven to 325ยบ, butter a 9x13 baking dish. Put cubed potatoes into a large pot. Fill with enough water to cover. Bring to a boil and cook until tender, but still firm, about 10 minutes. Drain, set aside. 

Place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Remove to paper towels to drain.

In a large bowl, stir together the potatoes, cheese, onion, mayo, salt, and pepper. Spoon into prepared baking dish. Crumble bacon over the top. Bake for 1 hour until golden brown.
