Christmas Quiche

4 eggs
1/2 cup milk
1 cup Swiss cheese or other white cheese
1/4 cup onion, chopped
4 cherry tomatoes
4 bacon strips, cooked and crumbled
1/2 teaspoon salt 
1 package (10 ounces) frozen chopped spinach, thawed and drained
1 unbaked pastry shell (9 inches)
1/4 cup Parmesan cheese 


Cook bacon until crispy, drain fat. In same skillet, saute the onion. In a large bowl, beat eggs; whisk in milk, cheese, onion, bacon, salt. Add spinach. Pour into pie shell. Top with sliced tomato and sprinkle with Parmesan cheese . Bake at 400° for 40 minutes or until a knife inserted halfway between the center and the edge comes out clean.
