2 corn tortillas
2 t olive oil
2 eggs
salt
pepper
Avocado Salsa
Cut round hole in center of tortilla using 3 inch cookie cutter. Heat large skillet or griddle over medium low heat, brush tortilla with oil. Brown tortilla cut-outs in skillet. Place tortilla ring in skillet and break one egg into center of each hole. Cook 2 or 3 minutes until whited have firmed. Carefully flip tortilla and egg and cook to desired doneness. Serve with avocado salsa. Place cut-out on top.
Avocado Salsa:
1 tomato, diced
1 avocado, diced
1/4 t salt
1/4 t black pepper
1/4 t cumin
pinch red pepper
