Momma's Chocolate Cake

In a 2 cup custard dish or large coffee mug mix:

1 T Brown Sugar (packed)
1 T Cocoa (slightly less)
3 T Hot Water
2 T Oil

Stir until well mixed and cool


Stir in:
1 beaten egg
1/3 C Quick Oats or Oat Flour
... adds 5 grams of fiber
1/8 t vanilla or Cinnamon (optional)
2 T Chocolate Chips (optional)

Microwave on high for 1-3 minutes. Invert on a dessert plate and sprinkle with powder sugar.

VoilĂ  ... a decadent chocolate dessert for mom when the kids are asleep.

This yummy treat will give you 10 grams of protein and 3 grams of fiber...8 grams if you add the Metamucil.
