4 cups mashed sweet potatoes
3/4 cup brown sugar
2 eggs, beaten
1 teaspoon pure vanilla extract
1 teaspoon cinnamon
1/2 cup melted butter
1/3 cup light cream
Topping:
1 cup light brown sugar
1/3 cup oats
1 cup chopped pecans
1/3 cup butter, melted
Mix casserole ingredients together, beating well until smooth. Place into greased 2 quart casserole dish. Combine brown sugar and oats for topping, being sure to smooth any lumps. Add pecans and butter to topping mixture. Pour topping evenly over top of sweet potatoes in casserole dish. Bake in preheated 350 degree F oven for 25 to 35 minutes. Serves 8.
