Fruity Pancakes

1 1/4 c flour
3 tsp baking powder
1 Tbs Sugar
1 cup of choice: bananas, finely chopped apples or applesauce, or any fruit
1/2 tsp salt
1 beaten egg
1 c milk
2 Tbs canola oil

Mix dry ingredients.  Combine egg, milk and oil; add to dry ingredients, stirring just until moistened.  Add fruit.  Cook on hot griddle.  Makes 12 dollar or 8 four inch pancakes.

For Blueberry Strawberry or other berry pancakes:
When the undersides of pancakes are nicely browned, sprinkle about 2 tablespoons drained berries over each cake.  Turn and brown other side.
