Pumpkin Cookies

In a power blender:
1/2 cup Instant Rice
2 cups Oats
2 t Soda
1t Cinnamon
1/2 t Salt

In a large bowl:
1 cup Brown Sugar
1/4 cup softened Butter
1 t Vanilla

Add to bowl:
2 beaten Eggs
1 (15oz) can Pumpkin
Dry ingredients

With a teaspoon drop on cookie sheet. Bake at 350 for 15-20 minutes.
Ice with cream cheese frosting after they have cooled.

Cream Cheese Frosting
1 T butter
1/4 t Vanilla
4 oz Cream Cheese
1 cup Powdered Sugar
