Better Bread


Glutino Gluten Free Bread Mix
2 1/4 cups lukewarm water
2 Tbs sugar
1 cup Oats
1/4 cup Chia Seeds
1/4 t salt
4 Tbs melted butter or oil
2 large eggs
1 cup Rice Milk

Preheat oven to 150º. In a small bowl mix 1 cup warm water (about 30 seconds in microwave), 2 Tbs sugar, and the yeast packet. Let set until yeast bubbles. In a power blender, mix the oats and seeds. In a large bowl beat the eggs with a hand mixer, add the yeast mixture, 1 cup water, and oat mixture. In the small bowl mix 4T butter, 1/4t salt and 1/4 cup hot water, add to mixture when butter melts. Alternate adding the milk and 1/3 packet of mix. Mix until smooth. With a spatula stir in the remainder of the mix.

Since there is no gluten, there is no need to knead. The mixture will be sticky. Divide between two large loaf pans. Turn off the oven and let the loaves rise for 45 minutes. Remove the loaves from oven and raise the oven temp to 375º. Bake 30 minutes.

Munchkins:
With half the mixture fill 24 miniature muffin pans. Let them rise the with loaf. Remove from oven and raise temp to 400º. Bake for 10-15 minute until golden brown.

Let the loaf rest while they bake. Turn the temp down and bake the remaining loaf.
