Pumpkin Pudding

2 eggs
1/2 cup brown sugar
1/4 cup Protein Powder (optional)
2 T  ground Flax or ground Chia Seeds (optional)
1 can (15oz) pumpkin
2 t cinnamon
1/2 t salt
1/2 cup quick oats
1 cup rice milk

In a large bowl, mix together with a hand mixer all ingredients, except the milk and oats, until smooth.
With a spatula stir in the milk and oats. Pour into a greased baking dish. Cover with topping.

Topping:
1 cup oats
1/2 cup brown sugar
1/2 cup nuts

1 t cinnamon
1/ 4 cup butter

Mix together in the same bowl with hands and sprinkle on top of pumpkin mixture.
Preheat oven 350º Bake 45-50 minutes. Makes 8 servings. Refrigerate after cools.
