Breakfast Cookies

Cream together:

3/4 stick softened butter
1/2 C brown sugar
½ t salt
1 t cinnamon

Stir in:

2 beaten eggs
1 15 oz can pumpkin

Add:

2 C *hot cereal mix *
¼ C raisins
1/3 C chocolate chips
½ C chopped nuts

Drop on a cookie sheet and bake 20 minutes at 350°

These make a moist cookie that doesn’t brown or spread. Since the cookies are so moist, you need to keep them refrigerated after they are baked. They still taste great cold or you can microwave them for 10 seconds.

*Hot Cereal Mix*
1 cup brown rice
1 cup oatmeal
3/4 cup lentils
1/4 cup flaxseed (optional)

Grid in blender for about 4 minutes until it makes a fine powder.
