Fruity Pancakes

1 1/4 c. Flour
3 tsp. Baking Powder
1 Tbs. Sugar
1 cup of choice: bananas, finely chopped apples of applesauce, or any fruit
(see below for special instructions for berries)
1/2 tsp. salt
1 beaten egg
1 cup milk
2 Tbs. Canola oil

Mix dry in ingredents. Combine egg, milk and oil; add to dry ingredients, stirring just until moistened. Add fruit. Cook on hot griddle. Makes 12 dollar size or 8 four inch pancakes.

For Blueberry, Strawberry or other berry Pancakes: When the underside of pancakes are nicely browned, sprinkle about 2 tablespoons draained berries over each cake. Turn and brown other side.

My kids will eat these pancakes without syrup, so they become finger foods that are not messy.
