Cream together:
3/4 stick softened butter
¾ C brown sugar
½ t salt
1 t cinnamon
Stir in:
2 beaten eggs
1 15 oz can pumpkin
Add:
2 C quick oats
¼ C raisins
1/3 C chocolate chips
½ C chopped nuts
Drop on a cookie sheet and bake 20 minutes at 350°
These make a moist cookie that doesn’t brown or spread. They are a nutritious snack when you are heading to soccer practice.
