Chicken Divan

1 1/2 lb broccoli ( about 3 large heads) chopped
24 oz boneless, skinless chicken breasts
salt and pepper
1 T butter
2 1/2 t olive oil
2 cloves garlic, crushed
2 T minced onion
1/4 cup flour
1 cup chicken broth
1 cup milk
1/4 cup white wine
6 oz swiss cheese, shredded
1/4 cup grated parmesan
1/4 cup bread crumbs

Bring a large pot of water to boil. Blanch broccoli 3 minutes. Drain and rinse in cold water. Preheat oven to 350ยบ. Oil 9x13baking dish. Season chicken with salt and pepper. Heat skillet, cook chicken until brown and almost cooked through, about 10 mins. Transfer chicken to cutting board. Add butter and oil to skillet. Saute onions and garlic until tender. Sprinkle flour and whisk until mixed. Whisk in broth, milk, and sherry. Bring to boil and remove from heat. Stir in half of swiss cheese, salt, and pepper. 

Arrange broccoli in baking dish and pour half of sauce on top. Arrange chicken on top and cover with remaining sauce. Sprinkle with remaining swiss cheese, bread crumbs and parmesan. Drizzle with olive oil.

Bake for 30 mins or until browned on top.
