Fried Rice

3 T soy sauce
1 T rice vinegar
1/8 t red pepper flakes
1 red bell pepper
1 T oil
6 green onions, cut into 1" pieces
1 T fresh ginger, grated
1 1/2 t minced garlic
1/2 lb boneless pork loin or tenderloin, cut into 1" pieces
2 cups shredded coleslaw mix
1 cup cooked brown rice

Combine soy sauce, vinegar, and pepper flakes in small bowl. Cut bell pepper into 1" pieces. Heat oil in large nonstick skillet or wok over medium-high heat. Add bell pepper, green onions, ginger and garlic. Stir-fry 1 minute. Add pork, cook 2-3 minutes until pork is cooked through. Stir in coleslaw mix, rice and soy sauce mixture. Cook and stir until heated through
