2 t olive oil
2 eggs, beaten
2 crisp corn tostada shells
salt and pepper
1/2 cup shredded cheese
deli ham slices
tomato slices
squeezable yellow mustard
Heat oil in small nonstick skillet over medium-low heat. Add eggs and seasoning. Scramble until firm. Place tostada shells on plate.
Add scrambled eggs, cheese, and ham circle. Cut ham triangle for ears. Place tomato slice for nose. Use mustard to draw eyes and mouth.
