1 T butter
1 T rice flour
1/3 cup beef broth
1 t Worcestershire sauce
1 lb cooked beef pot roast, diced
1 medium sweet potato, peeled and diced
1 stalk celery, diced
1 cup corn
1/4 cup diced red or green pepper
Melt butter in large skillet over medium heat, which in rice flour and cook 2 minutes, stirring constantly. Whisk in broth and Worcestershire, bring to a simmer. Add beef, potato, celery, corn, and peppers. Return to simmer, cover and cook 12 minutes or until vegetables are tender.
