Lasagna

1 lb ground turkey, beef, or pork
1/4 cup chopped onion
2 cloves garlic
2 cups water
12 oz tomato paste
2 t basil
1 t oregano
2 t parsley
1/2 t fennel seed
1 1/2 t salt
1/2 t pepper
1 T maple syrup
1 lb large curd dry cottage cheese
1/2 cup parmesan cheese
8 sheets no-boil lasagna
2 cups mozzarella, shredded

Brown meat. Saute onion and garlic. Add remaining ingredients, except cheese and noodles. Simmer 1 hour on low. Stir in cottage cheese and parmesan. In a greased 9x13 layer 1/2 sauce, 4 sheets, 1/2 mozzarella cheese, 4 sheets, 1/2 sauce. Cover with foil. Bake at 350ยบ for 50 minutes. Uncover, add the remaining mozzarella cheese and bake 10 minutes. Let stand 15 minutes before serving.
