2 T olive oil
1 onion, diced
1/2 cup carrots, diced
1 t cumin
salt & pepper
5-6 cups chicken stock
2 cups lentils
2 handfuls fresh spinach
In large pot saute onions until tender. Add carrots, spices, and stock. Rinse lentils well, drain, add to pot. Bring to a boil, then reduce to a simmer until lentils are soft. Add Spinach stir until wilted.
