2 T oil
1 lb lean ground beef
3 cloves garlic, minced
1 bag (16oz) classic coleslaw mix
4 large carrots, peeled and shredded
1/2 cup ketchup
1/4 cup soy sauce
1/4 cup water
1/2 t red pepper flakes
6 scallions, thinly sliced
16 flour tortillas ( 7" diameter)
In large skillet, heat oil over medium-high heat. Crumble in ground beef, saute until no longer pink. Add garlic, coleslaw mix and carrot, cook until vegetables are softened. Stir in ketchup, soy sauce, water, and red pepper flakes. Simmer 2 minutes. Remove from heat. Stir in scallions. Gently heat the tortillas. To serve, divide filling among tortillas and roll up.
