2 T plus 2 t margarine
1 1/4 cups milk
2 eggs, beaten
1 1/4 cups Gluten-free All-purpose Flour
1/4 cup finely chopped dried apple
1/4 cup golden raisins
3 T sugar
1 T baking powder
1 t cinnamon
1/2 t salt
syrup
Melt margarine in larges skillet or griddle over medium heat. Pour into medium bowl, leaving thin film of margarine on skillet. Whisk milk and eggs into margarine in bowl. Combine flour blend, apple, raisins, sugar, baking powder, cinnamon, and salt in large bowl. Add milk mixture, stir to combine. Pour 1/4 cup batter into skillet for each pancake. Cook over medium heat 2-3 minutes until golden.
