1 tablespoon Classico Pizza Sauce
1/4 cup ricotta cheese
2 tablespoons Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon oregano
1/8 teaspoon salt
2 tablespoons mozzarella cheese
1 Pork Sausage Patty, precooked, chopped
2 tablespoons Classico Pizza Sauce
2 tablespoons mozzarella cheese
Spray 1 soup mug or small bowl with non-stick cooking spray.
Add 1 tbsp pizza sauce and spread on the bottom of your mug.
In small bowl, combine ricotta cheese, Parmesan cheese, garlic powder, onion powder, oregano, and salt. Mix together well. Pour into soup mug on top of pizza sauce.
Add 2 tbsp mozzarella cheese on top.
In small bowl, mix pork sausage with 2 tbsp pizza sauce and spread on top of cheese mixture.
Sprinkle 2 tbsp mozzarella on top. Microwave 2 to 2 1/2 minutes on high. Let cool for a couple minutes.

Creamy Chicken and Gnocchi Soup
4 Tablespoons olive oil
4 Tablespoons butter, unsalted
1 large sweet onion diced
3 stalks celery diced small
1 cup carrots, diced
2 cloves garlic, minced
1 cup already cooked chicken breast, shredded (you can use leftovers)
1/4 flour
3 cups milk
1 cup heavy cream
2 cups chicken stock
1/2 teaspoon dried thyme
Salt and pepper, to taste
2 cups fresh spinach
1 17.5 oz package gnocchi

1 cup carrots, diced

1. Dice up the onion, carrots, celery and garlic. This is the base for most soups.
2. Heat olive oil and melt butter in a large pot.
3. Saute carrots, onion, celery and garlic in the olive oil/butter.
4. Get a pot of salted water heating up. Don't forget the lid, it'll quicken the boiling time.
Cook gnocchi according to package directions.
5. Whisk flour into veggie mixture. This will create a roux (a thickening agent).
6. Now add the milk and heavy cream and stir with a whisk. Stir frequently until thickens
**STORAGE TIP**
To freeze, ladle the thoroughly cooled soup into plastic cups like these and place in the freezer. Once the soup is frozen cut three slits in the rim of the cup and peel the cup away. Place in a gallon size freezer bag. Now you have individual serving of delicious homemade soup you can grab in a hurry and take to work with you! Who needs canned soup?!
Mac and Cheese in a Mug
- ⅓ cup elbow macaroni
- ½ cup water
- ½ cup shredded cheddar (the finely shredded version works best)
- 1 tablespoon butter
- 2 tablespoons milk
- Freshly ground pepper
Instructions
- Add water and macaroni to a large mug. Microwave for 2 minutes and then stir. Repeat twice for a total of 6 minutes. If the pasta has absorbed all the water after the 2 minute and 4 minute mark, add another couple of tablespoons of water.
- At the end of 6 minutes, the macaroni should be cooked. Add cheese, butter and milk and stir until cheese is melted.
- Garnish with pepper and extra cheese and enjoy!
